My ultimate life dream is to retire to Santorini, Greece, running a tiny little organic bakery a few days a week. The other days would be spent sipping tea before the sun rises and tending to my garden. In the meantime, here’s what’s happening in Grayslake…
Growing up in the area, I had made a promise to “one day” open here, specifically because we never had a true neighborhood bakery. On May 24th, 2013, my husband, Adam, and I opened our boutique brick & mortar, Cacao Sweets & Treats, located at 122 Center Street in downtown Grayslake, Illinois. Cacao is my testament to what food should truly be: Real. Pure. Made from scratch. Our sweets and handmade breads are only ever made of organic and local, non-GMO ingredients, constantly sourcing for the best.
Cacao is the opposite of fast food, from the way we make our treats with the passion and time the ingredients deserve to hoping you will slow down to grab a cup of locally-roasted coffee (served in a handmade mug) and enjoy a cookie or biscuit with us (in a vintage chair). My goal is to turn Cacao into a true community gathering place – what our town deserves and needs!
To experience the bakery at its best, be sure to stop in as early as possible! We bake for the day in the hopes of selling out to ensure daily freshness. The early bird catches the cake! Check out all of our features here!
We are a small batch of real people. No big batch, factory baking. No stock frozen cakes hoping to be purchased. Just what our hands can manage to make fresh each day. Our talented baker’s and counter managers are here serving you a side of real customer service. Our favorite is when you stop in so we can learn your name and favorite treats. We like to take the occasional hour for a staff birthday lunch (we take meals seriously!), or a trip to the orchard to pick apples for your treats.
We accept limited specialty orders per day, so the sooner you place your order the better, however, our minimum notice is 48 hours.

Lacey | Counter Manager
Likely the first face you see behind the counter. She loves any Cacao sandwich cookie, Lou Malnati’s Buttercrust pizza and genuinely making people happy. Her spirit country is Sweden.
Karina | Counter Assistant
Clean freak. Obsessed with Cacao carrot cake and cheesesteak egg rolls. Her favorite work moment is cutting our crazy tall cakes. She would move to Arizona for the best weather!
Kelly | Head Baker
Started as an intern and became our croissant pro. Kelly has a mad love affair with our peanut butter bars. It makes her blush when people compliment her croissants.
Anna | Baker’s Assistant
Our resident punny gal and hand letterer. World peace cookie lover. Anna dreams of living in the French or Italian countryside where she can live our her best Jane Austen moments.
Nana | Candy + Chocolate Baker
Seriously, no one can cut a perfect batch of caramels like her! She could live on blondies and sushi. Nana loves nature and her spirit animal is a hedgehog/sloth hybrid.
Adam | Co-Owner
Supreme taste tester. Adam has many shop names for all of his jobs: Hank (handyman), James (driver), Geo (espresso guy) and Bob for any other little side jobs. His last meal would be Candice’s homemade deep dish pizza and Cacao’s peanut butter sandwich cookies. His spirit celebrity/animal hyrbid is George Clooney and a Bear.
